Coffee Explosion!! A Recipe for Yumminess

Think cupcake.  Think…chocolate cake with a hint of espresso.  Filled with a rich coffee crème with crunched up espresso beans.  Topped with an espresso chocolate buttercream frosting and espresso bean crunchies.

Sounds yummmmy?  Well, I thought so, as did the wonderful people at Certe‘!

A few weeks ago, Certe’ hosted a My Dream Cupcake contest in which they were going to select 3 winning recipes to display in their new Pastry Case at their store on 20 West 55th Street (NYC).  I submitted 4-5 recipes, including my favorite (that unfortunately didn’t win):  Certe’ Split – banana cupcake with strawberry and pineapple fruit swirls, topped with chocolate frosting and a candied cherry.

However, with over 100 recipes submitted, I’m excited to share that what did win was my recipe for Coffee Explosion!

In addition to my recipe, the other 2 recipes that caught the eye (and tastebuds) of the staff at Certe are:

Snickers Cupcake: Chocolate devil’s food cupcake filled with gooey caramel mixed with peanuts, topped with chocolate ganache and a piece of a snickers bar. (Lauren Campbell)

Monkey Business: Maple flavored cake with caramelized banana filling with Nutella frosting and peanut brittle sprinkled on top. (Sloane Giddon)

Certe’ is going to host a tasting for the 3 winners shortly (I can’t wait!) and soon, you’ll be able to experience these cupcakes for yourself (if you are in NYC).  But don’t worry, if you don’t live here and can’t get access to Certe’, I’ll be share to share photos and my personal review after the tasting!
